We are a locally producing winery that uses an authentic Polish method of wine making to craft our premium line of wines.
Only 85 bottles of this unique flavour have been crafted!
Port is a Portuguese wine that is made by adding distilled grape spirit, usually brandy, to a wine base. The addition of the high-alcohol spirit stops fermentation and “fortifies” the wine.
This product is still considered a wine since it was the perfect blend of three very high alcohol wines, that were all fermented by us, to produce the final port wine.
It's a mature, floral bouquet of an assortment of cherries and berries that leaves a morish aftertaste on your palate making you want more!
It’s a deep red colour with an AVB of 20%
Regardless of the sweet floral aroma, it's a medium dry wine.
Some may ask how, well, we love bringing you exciting, new, locally produced wines while breaking the glass ceiling, and bad stigmas, associated with Trinidadian wines!
The line of products are Island Vine Wines created by 21 Bissika winery.
We are a small scale, Trinidadian winery that brings to you only the best, premium local wines on the market.
We pride ourselves in our treasured authentic recipes and equipment. The wine making method is authentically Polish(as in from Poland). I learnt the method of wine making from our beloved Polish uncle, Mareck Osika who is now deceased.
While trying to meet European standards, we pride ourselves in keeping to their quality of wine making. To ensure this top-shelf quality, only authentic equipment specific to wine are used in the wine making process.
For a simple example, the means in which we ferment our wines are done all using imported equipment specific to wine making.
Authentic, glass demijohns that were imported from Poland, that are over 120 years old, are our main means of making wine since we believe that premium wine cannot be made in plastic or be crafted using baking yeast as typically used in local, Trinidadian wines.
We also specifically use Hungarian Oakwood as well when aging our wines. This species of Oakwood has been found to compliment the tropical fruits used to make our wines.
Due to the care, methodology and quality ingredients, our wines reach up to and average of 20% average alcohol per volume. Scientific instruments are used where needed in terms of testing to ensure consistency for sugar content and alcohol content.
All of our wines are made fully Organic and Vegan Friendly. No form of animal by product is used in fermenting or aging our wines
Since it is our belief that chemicals from fertilizers can still find their way into the finished product, we have only been using organically grown fruits in our wines. This can be attested to by the natural sweetness that the fruits can develop.
Island Vine Wines truly marries a Caribbean taste with a high quality process. It is in my top 3 choices of wines!
This wine, I would describe as the addictive deception!
